Latest read — The Gingerbread Cowboy


My librarian recently recommended this book for my kids, and it is our new favorite bedtime story. A new take on the classic story of the Gingerbread Man, this book by Janet Squires is romping good fun!
The Gingerbread Cowboy tells the story of a rancher's wife who decides to forgo her traditional biscuit-making one morning, and makes a gingerbread cowboy instead. When they open the oven...well, you know what comes next. The illustrations by Holly Berry are warm and colorful, with coyotes, javelinas (pronounced havelinas), and beautiful colors of the Southwest.
This book has been such a hit at our house, that we decided to make some gingerbread cowboys of our own this afternoon. The girls had a great time mixing and stirring and decorating.

Here is a recipe for making your own gingerbread cowboy!

1/4 cup shortening or butter, softened
1/2 cup brown sugar
3/4 cup molasses
1/3 cup water
3 1/2 cup flour
1 tsp soda
1 tsp salt
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp cinammon

Mix sugar and shortening. Add molasses and water. Sift all dry ingredients together and add to moist mixture. The dough will be very crumbly, but will stick together well as you shape it. Roll dough 1/4" thick and cut with cookie cutter. Carefully transfer to ungreased cookie sheet. Bake at 350 for 10-12 minutes. Ice when cool.
